1 (14 ounce) can diced tomatoes (juice and tomatoes)
1-2 large roma tomatoes - diced
1 medium garlic clove - chopped
1⁄2 white onion - diced
1 jalapeno
1 teaspoon cayenne
3⁄4 teaspoons cumin (can add an additional 1 tsp to taste)
2 teaspoons jalapeno juice or hotsauce or a few pinches dried habernero
1 teaspoon sugar
1⁄3 cup cilantro (leaves, no stems)
1 tablespoon fresh lime juice
1 teaspoon salt

DIRECTIONS
Add all ingredients to a high speed blender or food processor. Blend for about 10 to 12 seconds and check the consistency to determine how chunky or runny you like your salsa. Refrigerate for an hour or two and serve. You can eat immediately but it will taste better if you let everything set.
½ cup blanched almond flour OR ¼ cup coconut flour
½ cup tapioca flour or arrowroot flour
1 cup coconut milk, canned and full fat
1 teaspoon salt, to taste
Ghee (slather that bread!), optional

INSTRUCTIONS
Pre–heat a 9.5 inch (or larger) nonstick pan or using this steel crepe pan over medium heat.
Mix all the ingredients together in a bowl, and pour ¼ cup of batter onto the pan. Spread the batter out with a spoon.

After 2–3 minutes, or once the batter fluffs up and looks firm/mostly cooked, flip it over to cook the other side (be patient, this takes time. If you are worried about the outside burning, just lower the heat).

NOTES

If the middle still seems slightly undercooked, place the flatbread on a baking sheet and bake at 350°F for 10-15 minutes, or until done.

If the cream has solidified in your canned coconut milk, then mix well before using.

After blending the egg, add to the flour mixture.

Add to the flour and egg mixture:
1 Cup real mayonaise
1 tsp apple cider vinegar

Mix all the ingredients together

Use ice cream scoop to line up dough ball mixture on a greased cookie sheet. I used coconut oil to grease my cookie sheet. Flaten down the scooped out dough to desired size and thickness. They do not rise much when baked.

Bake for about 15 minutes (or maybe shorter time) at 400F.

I check mine at about 9 minutes, don't want to over bake them, when the edges look golden and the tops start to darken up, they're about done.
(This is a recipe I got from Laurie Richardson, she adapted it from the Everyday Paleo book. We used the almond flour in the picture.)
1 gal. tomatoes
2 cups bell pepper
1 cup hot pepper
2 cups onion
1/2 cup sugar
1/2 cup apple cider vinegar
2 tablespoons salt
Cook until tender.
I would also recommend blanching the tomatoes first, then peel and dice. I usually doubled the recipe when I made it. It takes > 45 min to cook down, but you can cook it more or less for consistency. After canning, I did boil the jars in a hot water bath for ~ 15 min to sterilize them.keithhttp://www.blogger.com/profile/02699691776040512537noreply@blogger.com0tag:blogger.com,1999:blog-6418970457466431443.post-39181732168078270112011-03-10T08:08:00.000-08:002011-03-10T08:14:01.680-08:00Curry and Tumeric Roasted CauliflowerThis is one of my favorite side dishes:

Ingredients:
Yellow Curry powder
Turmeric Powder
Salt and Pepper
Olive Oil
1 bag frozen cauliflower (you don't have to de-frost)

Directions:
Preheat oven to 425

Put cauliflower on a baking sheet (line with foil if you like to avoid clean up like I do).
