Thai - Roasted Red Pepper (chillis)

Thai Roasted Red Pepper

Have dry red chillis on hand, either by drying them, or simply picking them off the ground after they fall off the plant.

Add 2-3 T of vegetable oil to a pan and put on high heat, stir in dried chillis, and cook until chillis become dark but not burned.

Cool chillis, you can either smash in pestle/mortar or put through a food processor.
